Ingredients
1 dozen flour tortillas
Refried Pinto Beans (homemade are best, but canned work great too!)
Butter
Shedded Cheddar and Pepper Jack Cheese
Spanish Rice (leftover rice works great)
any meat filling you like such as pork, beef, chicken, shrimp or fish
TOPPINGS:
Shredded lettuce
Chopped Tomatoes
Olives
Salsa
Sour Cream
Guacamole
lime wedges
cilantro
Chopped red onion
Nacho Cheese Sauce
Preparation
Brown your meat in a skillet with your favorite mexican seasonings. Place one tablespoon of butter on a non-stick skillet and melt it around. Place a flour tortilla on the butter and top with about 2/3 c. of refried beans. Sprinkle on shredded monterey jack cheese in desired amount and meat filling and rice. Fold your tortilla over one time to make a half moon shape and top the outside top with 2 T. cheddar cheese. Flip over and cook cheese until it forms a crust and then plate and top with your favorite toppings.
