Ingredients

2 # fresh halibut fillets

1 1/2 cups mayonnaise

1 tsp thai red curry paste

3 shallots minced

2 T olive oil

one red pepper sliced

Preparation

Mix mayonnaise and curry paste Place shallots and olive oil on a sheet of aluminum foil turned up at the edges to make a shallow pan Pre-heat grill to 500 Close the grill and saute shallots in olive oil until they start to brown 2-5 min. Place halibut fillets on top of shallots. Spread the curried mayo on top thickly. Decorate with sliced red peppers. Close grill and cook halibut until it just flakes 6 - 10 min. Serve with rice pilaf and steamed broccoli or a green salad
