Ingredients
1 cup chopped onion
3/4 cup diced green pepper
12 oz drained chopped mushrooms
3 tbls butter (not margarine)
3 cans (10.5 oz) cream of chicken soup
3 cups diced ham
2 1/2 cups uncooked minute rice
or 4 1/2 cups cooked rice
2 ounces diced pimento
1 1/2 cups grated cheddar cheese
pepper to taste
Preparation
In large stovetop pot - cook onion, pepper and mushrooms in butter until tender. Add soup and stir until smooth and hot. Blend in ham, rice, pepper and pimento. Sprinkle grated cheese over top. Cover and simmer about 15 to 20 miniutes or until cheese is melted and all ingredients are heated through. Make sure that heat is not too high.
