Ingredients

5 to 6 Yukon Gold potatoes, cubed

1/2 cup Hellmann’s® dijonaise

2 tbsp olive oil

2 tbsp apple butter BBQ sauce

browned onions

2 tbsp salsa spices, dried

1 tbsp balsamic vinegar

celtic sea salt and fresh ground pepper to taste

Preparation

Spread a thin layer of olive oil on a non stick bake pan. Add cubed potatoes. In a separate bowl, mix the above ingredients and pour over top of the potatoes. Mix until blended. Cover and bake for 40 mins. Remove cover and brown until golden. Excellent as a side dish with corn on the cob and BBQ!
