Ingredients

10-20 dried red chilies

1 tsp coriander seeds

2 tsp cumin seeds

2-4 cloves garlic

1/2 tsp salt

4-6 Tbs olive oil

Preparation

Discard stems and some seeds from chilies then soak in warm water 30 mins. until softened. Meanwhile, dry-fry coriander and cumin seeds (lightly) and grind them to a powder. Pound garlic cloves with salt and drop into blender with chilies and seed mixture. Trickle in oil while mixing into a smooth paste. Store in airtight jar with a bit more oil over surface to provide seal for up to 3 wks.
