Ingredients

2 large flour tortillas

1 ear grilled corn

1 grilled eggplant,skinned

2 grilled tomatoes

2 med. grilled potatoes

1/2 c. onion, chopped

3 boneless,skinless chicken thighs, grilled with creole seasoning

1/2c. shredded cheddar cheese

1/4c. 0% greek plain yogurt

franks hot sauce

Preparation

grill all vegetables saute chopped onion in olive oil in medium size sauce pan add diced grilled vegetables to warm heat griddle to warm tortillas assemble: cheese first, then diced chicken, then, vegetables add yogurt and hot sauce
