Ingredients

2 lbs boneless pork, cubed

2 tbl olive oil

1/2 c chopped onion

1 garlic clove, minced

1/4 c flour

2 1/2 c chopped peeled fresh tomatoes

1 3/4 c chopped peeled roasted Hatch green chilis

1 tsp salt

1/2 tsp sugar

1 tsp pepper

2 potatoes, cut into cubes

2-3 cups chicken broth

Preparation

Brown pork lightly in oil in large pot over med heat. Add onion & garlic. Saute 3-4 min. Add flour. Cook 1-2 min stirring constantly. Add tomatoes, chiles, seasonings. Mix well. Stir in potatoes. Pour in broth. Reduce heat. Simmer covered for 1 to 1 1/2 hours or until pork is tender.
