Ingredients

2 Cloves Garlic, crushed

1 Medium Onion, chopped

1 Tbsp Olive Oil

2 Medium Carrots, sliced

2 Medium Russet Potatoes, cut

1, 15 oz. Can of Vegetable Broth

1 Bay Leaf

Freshly Ground Pepper

6-8 oz Fresh Catfish fillets, cut into pieces

1, 6.5 oz Can of Clams in Juice

1, 8 oz Can Oysters

2 oz Canned Anchovies (optional)

2 Medium Tomatoes, chopped

Preparation

Saute garlic, onion, olive oil. Add carrots, potatoes, brown for 5 minutes. Pour broth over veggies. Add bay leaf, pepper, and enough water to cover potatoes.Bring to a boil.

Simmer until potatoes are soft, not mushy. Heat to medium, add catfish. Simmer 3-5 minutes.

Add clams, oysters, anchovies, tomatoes. Cook 3-5 minutes (do not overcook, oysters will become chewy).
