Ingredients

2 to 3 ripe bananas

1/4 cup melted butter/vegetable oil mixture

1 cup Splenda

1 1/2 cups whole wheat flour

1/4 teaspoon salt

1 egg, beaten

2 oz. fat free half and half

1 teaspoon baking soda

Preparation

Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well. Bake in a cooking spray coated loaf pan until a toothpick stuck into the bread comes out clean, 45 to 50 minutes. Slice and serve. I use low fat cream cheese as a spread.
