Ingredients

3 cups cooked, cooled rice

1 large hydroponic cucumber, seeded, diced

1-2 bunch cilantro, chopped

1 med red bell pepper, diced

3-4 clove fresh minced garlic

2 cans black beans, drained, rinsed

2 jalapeno peppers, seeded, minced

1/2 med red onion, diced

1/2 cup fresh lime juice

1/2 cup red wine vinegar

1/3 cup light olive oil

course ground black pepper

salt

Preparation

In a jar, shake up the lime juice, red wine vinegar, olive oil, black pepper, and salt

In a large mixing/serving/storage bowl, gradually combine all the prepared ingredients. The dressing always seems like a lot, but the rice will absorb. It’s better the second day, just give it a good stir when you take it out of the fridge
