Ingredients

6 oz pork loin (leave it as is or pound it out so it is thin)

2 tbsp 100% liquid egg whites

1 1/2 tbsp Oat Bran

1 1/2 tbsp Wheat Germ

1 1/2 tbsp Whole Wheat Flour

1/8 tsp garlic

1/8 tsp dried oregano

1/8 tsp dried basil

1 tbsp Grated Parmesan Cheese

1 tbsp Sea Salt

Pinch of Ground Black Pepper

1-2 Tbsp Vegetable Oil

Preparation

I have found that this recipe works best when you set up an assembly line.

Combine the wheat germ, oat bran , salt, pepper, parmesan cheese, garlic, oregano, and basil in one dish - make sure it is mixed well.

Put flour in another dish and egg whites in a third dish.

Heat the oil in a pan or skillet.

Take the pork and dredge it in the flour first until fully coated. Make sure to shake it a few times over the plate to remove any excess flour.

Dip and fully coat in the egg whites.

Finally, place in the dish with the mixed ingredients, or what I like to call my makeshift breadcrumbs, and fully coat.

Place in a pan and cook on both sides until browned and cooked through.
