Ingredients
4 cups naturally sweetened carob chips
1 1/2 cups peanut butter
3/4 cup raisins
1 cup chopped walnuts
Preparation
Melt carob chips in pot or saucepan until smooth. Remove from heat. Stir in peanut butter, and then fold-in raisins and walnuts. Coat a pan with vegetable spray, and then spread mixture about 1-inch thick. Refrigerate for 10 minutes, cut into squares, and then continue to chill. Store in airtight container. Note: All-natural vegan carob chips made with whole grain malted barley are recommended because they are already naturally sweetened. Variation: Substitute 2 3/4 cups crisped rice cereal for the raisins-walnuts, if desired.
