Ingredients
2 cups rolled oats
1 1/2 cups brown sugar
1 cup margarine softened
1 cup splenda
1 tsp vanilla
3 egg whites
1 1/2 cups flour
5 tsp baking powder
1 tsp cinnamon
1 cup milled flax seeds
1 cup unprocessed bran
2 cups shredded carrots
1 cup raisins
Preparation
- Mix sugar, margarine, vanilla, egg whites, and cinnamon until creamy.
- Add carrots and mix in raisins by hand with spoon.
- Drop by large spoonfuls onto greased, sprayed, or silicone-lined cookie sheets.
- Bake in preheated 325 oven for approximate 10 minutes. Press finger on top of cookie, if it springs back like a cake, they’re done!
