Ingredients

2 cups (cornmeal, wwheat flour, wheat germ, almond meal, oats, etc - a mix of 2-3 is best for texture)

1 tsp baking soda

1/2 tsp baking powder

Pinch of salt (if you want)

1/2 cup brown sugar

2 tbsp olive or veg oil

3-4 oz plain or vanilla fat free yogurt (2/3 of a small container)

1 tbsp vanilla extract

2 eggs

I/2 cup nuts

1 cup dark chocolate chips

Preparation

Mix dry ingredients in a bowl (flours/meals, baking salt and soda)

In another bowl beat the sugar, oil, yogurt, and vanilla until creamy - add the eggs and beat until combined. Do not over mix.

Beat in the dry mixture on the lowest setting until just mixed - add nuts and choc chips and fold in.

Freeze cookie dough for 15 minutes, or refrigerate for 1 hour or longer.

Pre heat oven to 375 degrees.

Using non stick cookie sheets, place spoonfuls of cookie dough at least 2 inches apart.

Bake for 7-9 minutes.
