Ingredients
500g. mixed fruit
1cup. apricot nectar
1.teaspoon honey
1cup.cold mashed pumpkin
1 3/4.cups self-raising flour,
sifted with 1 teaspoon each bi-carbonate of soda and mix spice
whole nuts to decorate,optional
Preparation
1.Place dried fruit,nectar and honey in a large bowl, stir to combine.cover and allow to stand for 1 hour.2Preheat oven to a moderate 180’c.double-line the base and sides of a 20cm round cake pan with baking paper,Star pumpkin into the fruit and mix to combine. Add sifted self-raising flour mixture and stir well.pour mixture into prepared pan and level the surface.Decorate with whole nuts, 3.Bake for 1hour 15 minutes or until a skewer inserted comes out clean and top is golden. Wrap in a tea towel to cool
