Ingredients
1 lb. lamb for stew
1 cup red lentils (may substitute brown)
1 cup wild rice blend
1 cup sliced carrots
1 cup leek
1 cup celery
8 cups water
2 tblsp vegetable bullion
2 tblsp olive oil
2 tblsp fresh thyme
1-2 tsp ground cloves (or to taste)
Preparation
- Brown lamb in olive oil in a large stew pot, set aside in a bowl.
- Add water to pot, bring to a slow boil.
- Add lentils, rice and bullion, cook for 15 min.
- Add vegetables, lamb, thyme and ground cloves, cook for an additional 30 minutes or until lamb is fully cooked.
