Ingredients

Wet Ingredients:

3/4 cup grated carrot

3/4 cup applesauce (sweetened or unsweetened, depending on your preference)

1 cup milk or milk alternative

1/4 cup blackstrap molasses

1/4 cup agave or honey

1/3 cup grape seed or coconut oil

1/2 cup dates

1/8 cup pecans

1/8 cup walnuts

1/8 cup sunflower seeds

1/2 cup raisins

Dry Ingredients:

2 cups spelt flour

1 cup flaxseed OR 1/2 cup chia seed

2 tsp baking powder

1/2 tsp baking soda

2 tsp cinnamon

Extra:

Sesame seeds

Preparation

Preheat oven to 375 F lightly oil a 12-muffin pan.

In a large bowl, combine dry ingredients. In a smaller bowl, combine wet ingredients. Gradually at wet ingredients to dry until just blended. Pour into muffin pan and sprinkle with sesame seeds.

Bake 10-15 minutes and let sit to cool before removing.
