Ingredients

1c Whole wheat flour

1 egg

1 tsp baking powder

1/4 tsp baking soda

1/2 c yogurt

2 tsp vanilla extract

Preparation

Blend all ingredients to form a thick consistency. If mixture is too thick, add a little milk. If too runny, add a little four. Heat a skillet over medium heat, add olive oil to coat the entire cooking surface. Pour 1/4 c of the mixture onto the skillet and cook both sides until a toothpick inserted into the pancake comes out clean. Serve with a garnish of fresh berries or a seasonal fruit medley.
