Ingredients

1/2 box whole wheat pasta or corn pasta

4 cups chopped garden fresh tomatoes (any variety)

5 cloves garlic (minced)

1/4 cup chopped fresh basil

1/2 tsp Kosher salt

Pepper to taste

3 tblsp EEOV

Freshly grated Romano cheese (optional)

Preparation

Mix tomatoes, garlic, EVOO, salt and pepper and roast in oven at 350 for 45 minutes, stirring occasionally. While tomatoes are roasting, cook pasta. After 35 minutes minutes add fresh chopped basil and romano cheese to the tomato mixture. Drain pasta, add tomato sauce and serve.
