Ingredients
2 cups of self rising flour
1 cup of sugar
.75 cup of oatmeal OR chopped almonds/pecans
.75 cup skim milk (.5 cup if you use nuts instead of oatmeal)
.5 cup egg beaters
.5 cup canola oil
2 well-ripened bananas
Preparation
Mix all ingredients in a mixing bowl. Once mixed, let it sit for a few minutes until the oatmeal is good and soggy.
Pour into muffin pans.
Bake at 350 for about 30 mins or until the muffins are to your desired brown color.
