2 cans (14-ounces each) hearts of palm, drained 

1/4 cup chopped chives 

1/2 cup packed cilantro leaves, plus more for serving 

1 teaspoon grated lime zest, plus 2 teaspoons fresh juice 

1/3 cup extra-virgin olive oil, plus more for drizzling 

1 teaspoon kosher salt 

1/2 teaspoon freshly ground black pepper 

Plantain chips and crudités, for serving 

Preparation

Place hearts of palm, chives, cilantro, lime zest and juice, oil, salt, and pepper in a food processor; pulse until combined. Serve, drizzled with more oil, with plantain chips and crudités alongside.
