Ingredients
1 (28 oz) can Contadina® Crushed Tomatoes
1 (14.5 oz) can Contadina® Petite Diced Tomatoes
2 tbsp olive oil
1 large sweet Vidalia onion, diced fine
3 cloves garlic, minced
1 small can of beef broth
1/2 tsp pepper & salt (each)
1 bag carrots, raw
1 1/2 lb stew meat
1 tbsp freshly minced oregano
1 lb rigatoni pasta
Preparation
- Heat sauté pan on med high heat.
- Add Olive Oil to pan.
- Add onion and sauté over med high heat until onions are translucent.
- Add garlic, salt and pepper.
- Add 1 can diced tomatoes and 1 can crushed tomatoes. Sauté for 1 minute.
- Add beef broth and carrots. Turn down heat to med and sauté until carrots are cooked to your liking.
- Add beef and sauté until med rare to med. Add 1 tbsp oregano and 1 lb of cooked rigatoni shaped pasta.
- Toss together and serve immediately.
