Ingredients

1/4 cup vegetable oil

1 cup maple syrup, reduced to 2/3 cup

1 Tbsp. vanilla extract

1/2 cup toasted wheat germ

1/4 cup sesame seeds

1/2 cup shredded unsweetened coconut

3 1/2 cups rolled oats

1/2 cup pumpkin seeds

1/2 cup whole almonds, coarsely chopped

1 cup mixed dried fruit

Preparation

Preheat oven to 225 degrees.

Heat oil, syrup in a small saucepan over low heat. Add vanilla.

Toss wheat germ, sesame seeds, coconut, oats, pumpkin seeds and almonds in a large bowl. Stir in syrup mixture. Spread mixture onto 2 baking sheets. Bake until golden brown; about 1 - 1 1/2 hours, stirring occasionally.

Transfer to a large bowl, add dried fruits, let cool. Enjoy.
