Ingredients

1 ½ lb. hot sausage

2 medium onions, chopped

30 oz. chicken broth

1 cup red or white wine

2 cans Hunt’s Diced Tomatoes with Roasted Garlic

2 cans (15 oz.) Great Northern Beans

2 cups water (optional)

1 package washed baby spinach

Preparation

Cook: Sausage and onions over medium high heat until thoroughly done. Drain fat.

Add: broth, wine, tomatoes, water (optional) and beans. Cook for 5 minutes or longer.

Stir in spinach. Cover and cook until spinach wilts. The leftovers are fabulous!

Tip: I like Jimmy Dean Hot sausage the best. Baby Spinach is much more tender than regular spinach and it doesn’t have any stems!
