Ingredients

1/4 cup flaked coconut (for pan)

Cake:

1/2 cup butter

1 cup sugar

2 eggs

1 3/4 cups flour

3 tsp baking powder

1/4 tsp salt

6-8 apples, cut in 8ths

2 tbsp sugar

1 tsp cinnamon

Topping:

1/4 cup butter

1 cup sugar

2 eggs

3 tbsp flour

1/2 tsp vanilla

1/2 tsp almond extract

1/2 cup flaked coconut

Preparation

  1. Sprinkle the 1/4 cup coconut on sides and bottom of greased 9-inch spring form pan.
  2. Cream butter. Add sugar and eggs and beat well. Add flour, baking powder and salt. Mix well. Drop this batter into prepared pan. Spread.
  3. Stand apple wedges in circles in batter. Combine sugar and cinnamon. Sprinkle on top of apples. Bake 1 hour at 375 F.
  4. Remove cake from oven. Combine topping ingredients and spread over hot cake.
  5. Continue to bake another 30 min. Cool in pan. Enjoy warm with ice cream or whipped cream!
