Ingredients

Carrot Cake ingredients:

2 Cups Sugar

1 1/2 Cups vegetable Oil

4 Eggs

2 Cups Flour

2 Teaspoons baking soda

1 Teaspoon salt

2 teaspoons cinnamon

1/2 cup pecans.

Icing Ingredients:

1-8 oz. pkg. cream cheese

1/2 stick butter

2 teaspoons vanilla

1 box powdered sugar

1/2 cup pecans

Preparation

Cake instuctions: Cream sugar & oil throughly and unbeaten eggs. Sift dry ingredients together. Add to creamed mixture, add carrots and pecans. Pour mixture into cake pans or 9 x 13 in. baking dish. Bake cake in 300 degree oven for 1 hour.

Icing Instructions: Spread over cooled cake
