Ingredients

1 cup of sugar

1/4 cup cream of tartar

4 eggs separated( use only whites, store yolks for a different recipe)

1 teaspoon of lemon juice

2 pints of strawberries,( washed, dried and hulled )

1/2 cup seedless strawberry jam

Fat free cool whip topping optional

Preparation

Sift together 1 cup of sugar and cream of tartar. Beat egg whites until stiff but not dry. Gradually add sugar mixture, continuing to beat until well blended. use this meringue to line the bottom and sides of a 10 inch pie plate.Hollow out most of the center by pushing the meringue to the sides of the pie plate. Bake at 275 degrees for 1 hour. Remove from oven and cool.

Melt jam with lemon juice in a small saucepan over low heat until spreadable. Place berries, cut side down in cooled meringue shell. Brush tops with jam mixture. Cool in fridge for 6 hours. serve with fat free cool whip on the side if desired.
