Ingredients
1 medium red onion, sliced
2 zuchinni squash, sliced
3 bell peppers, red, yellow, green, cut into 1/8’s
1/2 pound portobello mushrooms, sliced
Any other vegetables that you beleive will raost well
Rosemary, dried
Thyme, dried
Garlic salt
Pepper
Olvie oil
Preparation
Preheat oven to 400 F (200C). Slice vegetables medium thick. Place in a large bowl and baste with olive oil. Place oiled veggies on large baking sheets. Be sure not to stack veggies on top of each other. Season with herbs, garlic salt and pepper to taste. Roast on top rack of oven for 20 - 30 minutes or until veggies begin to brown. Remove and serve hot or cold.
