Ingredients

6 heirloom tomatoes

1 cup sliced English cucumber

2 Tbsp red wine vinegar

1 Tbsp extra-virgin olive oil

2 sprigs fresh basil

salt & pepper to taste

Preparation

Core tomatoes and cut into quarters. Peel and seed cucumber, then cut into five or six pieces and combine with tomatoes. Dress with red wine vinegar, olive oil, salt and pepper. Let sit for 30 minutes.

Add basil and puree in a blender until smooth. Chill for at least 1 hour. Garnish with olive oil and, if desired, chives or micro basil.
