Ingredients

2 1-lb. cans whole carrots

1/4 tsp pepper

1 medium onion, sliced to form rings

1/2 tsp paprika

3/4 cup sugar

1/2 tsp yellow mustard

3/4 cup vinegar

1 tsp salt

1/2 cup salad oil

Preparation

Drain carrots. Layer carrots and onion rings. Mix the remaining ingredients together and beat 3 minutes - blender works well but whisk perfectly fine. Pour mixture over carrots and onions. Cover with lid and refrigerate 24 hours. Drain before serving. Keeps well.
