Ingredients
1 4lb roasting chicken
1 12oz pkg bread stuffing(herbed)
1 c water
3 T butter
1 lg chopped onion
3/4 c frozen chopped spinach, thawed
2 oz proscuitto or baked ham, cubed
2 minced garlic cloves
2 t dried sage
1/2 t dried rosemary
2 T each heavy cream and lemon juice
Preparation
Oven to 350. Rinse chicken and dry. Toss stuffing with water and in large skillet melt butter on med. Add onion, spinach, ham, garlic, sage, and rosemary. Saute till tender. Add Spinach mix to stuffing and stir in cream and lemon juice. Spoon into chicken and roast on rack till chicken is 80 degrees and brown about 1 hour 45 minutes.
