Ingredients
1 tablespoon olive oil
1/2 pound firm herb tofu, drained
3 small tomatoes
3 large garlic cloves, minced
Salt and pepper
Handful wide rice noodles, boiled
Soy sauce to taste
Preparation
Prepare all ingredients before you heat the oil. On a cutting board, cut tofu into bite-size chunks. Dice tomatoes into bite-size chunks. Mince garlic. Set all ingredients aside.
- Boil 3 cups of water. Add rice noodles and turn heat to low.
- Heat olive oil in frying pan.
- Toss in tofu. Season with salt and pepper.
- After 2-3 minutes, add minced garlic. Fry until tofu is golden brown.
- Rice noodles should be cooked. Drain and add tofu and garlic.
- Season to taste with salt, pepper and soy sauce.
