Ingredients

1 tablespoon olive oil

1/2 pound firm herb tofu, drained

3 small tomatoes

3 large garlic cloves, minced

Salt and pepper

Handful wide rice noodles, boiled

Soy sauce to taste

Preparation

Prepare all ingredients before you heat the oil. On a cutting board, cut tofu into bite-size chunks. Dice tomatoes into bite-size chunks. Mince garlic. Set all ingredients aside.

  1. Boil 3 cups of water. Add rice noodles and turn heat to low.
  2. Heat olive oil in frying pan.
  3. Toss in tofu. Season with salt and pepper.
  4. After 2-3 minutes, add minced garlic. Fry until tofu is golden brown.
  5. Rice noodles should be cooked. Drain and add tofu and garlic.
  6. Season to taste with salt, pepper and soy sauce.
