Ingredients

2 pounds new or red potatoes

1 cup mixture of chopped parsley, dill, and chives

1/2 cup chopped shallots

6 tablespoons white wine vinegar

6 tablespoons olive oil

salt

pepper

Preparation

Quarter and boil potatoes.

Mix herbs, shallots, vinegar, olive oil, salt, and pepper.

Toss with potatoes.
