Ingredients
Spices:
Dried Mint- 4 TBsp
Dried Lemon Zest- 2 TBsp
Ground White Pepper- 4 Tsp
Ground Black Pepper- 2 Tsp
Dried Lemongrass- 2 Tsp
Ground Cumin- 1/4 Tsp
Cayenne Powder- 1/2 Tsp
Thai Roll-Up:
Ground Chicken or Crumbled (marinated in soy) Tofu- 1/2 lb
Garlic- 3 Cloves minced
Chicken Broth or Veggie Broth- 4-6 TBsp
Green Onion- 2 TBsp finely chopped
Fresh Cilantro- 1 TBsp finely chopped
Herbal Thai Seasoning Mix- 1 TBsp
Lime Juice- 1 TBsp
Nam Pla (fish sauce) or 2 parts Soy Sauce/1 part Lime or Hoisin- 1 TBsp
Lettuce Leaves, washed and dried- 12
Optional:
Shredded carrots
Shredded cabbage
Preparation
Spice Blend- Combine all and grind finely.
Thai Roll-Up- Heat 2 Tbsp broth to a boil in saute pan. Add chicken (or other) and garlic, stir fry. Keep adding broth as needed till chicken is cooked. Remove from heat and mix in onions, herbs, lime and fish sauce (or other). Mix well, spoon onto lettuce leaves, wrap up sides, then roll up, and eat with fingers.
