Ingredients
1 medium unpeeled potato, chopped
1 medium onion, chopped
1 stalk celery, minced
1 clove garlic, minced
2 Tbsp.water
2 cups tomato juice
2 cups milk
1 103/4 oz. condensed tomato soup
2 Tbsp. snipped fresh parsley
1/2 tsp. salt
1/2 tsp dried thyme, crushed
Preparation
In a heavy saucepan, cook the potato, onion, celery adn garlic in butter and 2 tbsp. water, covered 8-10 minutes or till vegetables are tender. Stir in tomato juice, milk, condensed soup, parsley,. garlic powder, thyme and 1/4tsp. pepper and garlic powder. Heat through.
