Ingredients
1 1/2- 2 lbs. chicken breast (pounded evenly)
4 teaspoons each fresh thyme, rosemary, & oregano
3-4 garlic cloves
2 Tbsp. olive oil
1 Tbsp. fresh lemon juice
1 Tbsp. fesh grated lemon rind
salt & pepper
Preparation
put all the fresh herbs, garlic, olive oil, lemon juice & zest in a food processor.
Put paste on pounded chicken breasts, wrap in plastic wrap, put in baking dish and marinade for 1-2 hrs.
Drizzle small amount of oil in pan and brown chicken.
Finish in 350 degree oven for around 15 min.
