Ingredients

1 cup homemade ketchup

3 tablespoons minced onion (or 3 teaspoons onion powder)

2 or 3 tablespoons butter

1-2 tablespoons freshly squeezed orange juice

Scant 1/4 cup Grade B dark maple syrup, or to taste

1 or 2 tablespoons Worcestershire sauce or 2 teaspoons Southeast Asian fish sauce

1 tablespoon chili powder

1 tablespoon unfiltered cider vinegar

1 teaspoon freshly ground black pepper

1/2 teaspoon blackstrap molasses (optional)

1/4 teaspoon sea salt (omit if using fish sauce)

Preparation

Mix all ingredients together in a small pan and simmer over low heat 5-10 minutes, stirring occasionally. Store in an airtight glass in the refrigerator for up to 3 weeks.
