Ingredients
5 medium yellow squash sliced 1/4 inch rounds
1 large onion halved and sliced thin
2 tablespoons butter, divided
1/2 cup chicken stock
1 1/2 tubes ritz crackers
1/2 cup cream
salt
pepper
Preparation
Heat oven to 350 Butter oven-proof bowl/casserole Saute onions and squash until slightly soft, adding salt and pepper to taste Add chicken stock and cover for about 5 minutes Crumb the ritz crackers in the tubes Layer half tube of ritz crackers on the bottom of the bowl. Pour off chicken stock and add 1/2 squash mixture to bowl. Layer second half tube of ritz crackers over squash. Add remaining squash mixture. Saute third half tube of ritz crackers in butter briefly. Top bowl with sauteed crackers. Pour cream over the top. Cook in oven for 30 minutes.
