Ingredients
16 oz penne pasta
1/2 cup vegetable oil, divided
1 garlic clove, pressed
4 skinned and boned chicken breast halves.
1/2 cup chicken broth
1/2 cup Hoisin mixture
2 celery ribs, sliced
2 green onions, sliced
1 small cucumber, peeled, seeded, and sliced
1/2 small red bell pepper, cut into thin strips
3/4 tsp salt
3/4 tsp pepper
Mixed salad greens
2 tsp toasted sesame seeds
Preparation
Prepare pasta according to package directions. Return to Dutch oven and toss with 3 tbsp oil.
Heat remaining 5 tbsp oil in large skillet over medium heat; add garlic, and saute 1 minute. Add chicken, and cook 4 minutes on each side or until done. Remove chicken from skillet. Stir in chicken broth; bring to a boil. Reduce heat, and simmer 10 minutes or until reduced to 1/3 cup; remove from heat, and stir in Hoisin Mixture. Toss with pasta.
Cut chicken into 1/2 inch cubes. Add chicken, celery, and next 5 ingredients to pasta mixture; toss well. Spoon over salad greens; sprinkle with sesame seeds. Serve immediately.
