Ingredients
1 1/2 cup pineapple juice
1/2 cup packed brown sugar
1/4 cup soy sauce
1/2 cup prepared mustard
12 lb sugar-cured Virginia ham, fully cooked
Whole cloves
Preparation
Mix pineapple juice, sugar, soy sauce and mustard, blend until smooth. Trim ham of dark outer skin. Partially trim away fat, leaving 1/2 inch layer. Score fat in diamond pattern. Stu dwith whole cloves. Place in roasting pan, brush with glake and bake at 325F for 2.5 hours, basting frequently. Cover with foil, lower heat to 300F and bake another hour.
