Ingredients
3 eggs
1 c. brown sugar
1 c. white sugar
2 c. flour
2 tsp. baking soda, 1 tsp. white distilled vinegar(mix together prior to putting in mixer)
½ tsp. salt
20 oz. crushed pineapple, drained well
½ c. dried cranberry
½ c. walnuts, chopped
½ c. dried prunes, diced into small cubes
Powdered sugar, for sprinkling
Preparation
In mixer bowl, combine the eggs and two sugars and mix until well blended (paddle attachment). Add the flour along with baking soda/vinegar mixture & salt. Mix well. Fold in the pineapple and mix until well blended. Lastly, add the cranberries, walnuts and prunes. Gently mix until well incorporated. Bake in a round 10" cake pan at 325 degrees for about 35 minutes or until toothpick comes out clean. Cool on rack. Sprinkle with powdered sugar and serve in slices.
