Ingredients
1 lb potatoes
4 hard boiled eggs
1 Can Beets (coursely chopped)
1/4 cup beet liq.
1 large red onion (chopped)
2 garlic cloves (finely chopped or minced)
2 tsp. olive oil
3 tbsp cider vinegar
1 cup mayo
salt and pepper to taste
1/2 red pepper thinly sliced
1/2 green pepper thinly sliced
Preparation
Boil potatoes and eggs accordingly. Let cool. Add all ingrediates including salt and pepper to taste except red and green pepper. Place red and green pepper as garnish topping. chill for 30 min. serve.
