Ingredients

2 lbs of potatoes cut in small square, uncooked.

1 large onion, chopped.

4 tbs of olive oil

salt

ground pepper

Preparation

  • Pre-heat the olive oil in a large sauté pan on medium high heat, add onion, add salt and let cook for 2/3 minutes covered.
  • Throw in the potatoes, salt and pepper, COVER (the moisture will steam the potatoes).
  • Stir every 2 minutes so they burn a little. Different kinds of potatoes cook faster. Check tenderness with a toothpick, uncover when tender to avoid the potatoes to fall apart. Serve when they look nice and burnt a little on all sides. ENJOY!!!
