Ingredients

1 pound trimmings from Pork Butt Roast or 1 pound ground pork. 70% lean

1 Teaspoon Kosher salt

1 Teaspoon red pepper flakes

1 1/2 teaspoon Fennel seeds

1/4 teaspoon Fresh ground black pepper

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1 or 2 tablespoons finely diced onion.

use onion powder instead if using ground pork version

Preparation

If using pork butt, mix all ingredients together and run 1 or 2 times through a meat grinder. Fry a test patty and adjust seasonings if needed.

If you buy ground pork instead just mix everything together and adjust to your liking.

Stuff in casings if you desire

Refrigerate overnite for best results
