Ingredients

2/3 loaf stale rustic Italian or french bread

2 c finely grated pecorino romano cheese

6 green onions, finely chopped

1/2 italian parsley, chopped fine

3 cloves garlic, peeled and minced

1/3 c chopped basil

1/2 tbsp kosher salt

1/2 tbsp black pepper

Preparation

  1. Preheat oven to 175 deg F
  2. Cut bread into cubs and spread evenly on baking sheet and cook for 45 min until dry and lightly brown. Place in food processor and grind.
  3. Place all ingredients in mixing bowl and then store in refrigerator in airtight container.
