Ingredients

3/4 cup Vegetable oil

1 Egg

1/2 Citrus

1 tbsp Dijon mustard

1 tsp Salt

Preparation

  • In a mixing bowl, add an whole egg, the juice of half a citrus, the Dijon mustard and the salt.

  • With an immersion blender mix those ingredients together.

  • While mixing, slowly integrate the oil to create an emulsion.

  • Homemade mayonnaise can easily be kept one week in the refrigerator.
