Ingredients
3/4 cup Vegetable oil
1 Egg
1/2 Citrus
1 tbsp Dijon mustard
1 tsp Salt
Preparation
In a mixing bowl, add an whole egg, the juice of half a citrus, the Dijon mustard and the salt.
With an immersion blender mix those ingredients together.
While mixing, slowly integrate the oil to create an emulsion.
Homemade mayonnaise can easily be kept one week in the refrigerator.
