Ingredients

2 tbls cornstarch

1/4 cup cold water

1/2 cup white sugar

1/2 cup brown sugar

1 cup Tamari (or soy) sauce

1/2 cup apple cider vinegar

2 cloves garlic, minced or pressed

1 tsp freshly minced or pressed (or ground) ginger

1/2 tsp ground black pepper

pinch of salt to taste

Preparation

In a small saucepan over low heat, combine all ingredients except water and cornstarch. Dissolve cornstarch in water in a separate bowl and add to pan. Bring mixture to a simmer, stirring frequently, until sauce thickens and bubbles.
