Ingredients

1 deep dish pie crust

1 lb. swiss cheese (a little sharp)

1/2 c. grated parmesan cheese

1 10 oz. pkg frozen chopped spinach

1 bunch scallions

5 strips bacon crumbled

3 eggs

1 pint heavy cream

1 egg white

Preparation

Brush pie crust with egg white and bake for 7 minutes.

Mix spinach, bacon, scallions. Pour in pie crust. Top with swiss cheese.

Top with grated swiss cheese.

Beat eggs with heavy cream (make a hole in the center to pour the stuff on top) and pour over top.

Sprinkle parmesan cheese on top.

Sprinkle a little oregano on top.

Bake at 350 degrees for 40 minutes.
