12OZ HOMINY YELLOW/WHITE CANNED

4 EGGS

1tsp ONION DEHYDRATED FLAKES

1/4 tsp TUMERIC

1/4 tsp GARLIC POWDER

1/4 tsp SALT/PEPPER

2tsp OLIVE OIL

1/3 cup Shreaded Monteray Jack

Preparation

EMPTY HOMINY INTO A SAUCE POT AND BRING TO BOIL STIR, DRAIN LIQUID AND PUT BACK INTO POT TO ALLOW TO DRY OUT FROM RESIDUAL HEAT.

IN A BOWL CRACK 4 EGGS WITH ALL DRY INGREDIENTS. WHIP WITH WIRE WHISK UNTIL BLENDED AND FLUFFY WITH AIR INCORPORATED INTO MIX.

POUR HOMINY INTO A HEATED SKILLET WITH SOME OLIVE OIL AND POUR EGGS OVER AND COOK TILL FIRM. SPRINKLE ON CHEESE PLACE UNDER BROILER OR SALAMANDER TO FINISH OFF TOP.

Place on a cutting board anc cut like pizza.
