Ingredients

500g chickpeas

1.5 tbs soda

750ml cold water

2 tsp salt

300ml Tahini (280g)

200ml lemon juice (200g)

1 clove garlic well mashed in salt

Preparation

Soak chickpeas overnight with half of the soda Take chickpeas out of water, wash, add cold water & remainder of soda - heat and skim foam - reduce heat for 2 hours Mash garlic with salt - drain chickpeas and stir onto mashed garlic - blend mixture - gradually add tahini and lemon juice- run entire mixture through fine strainer
